I found this idea quite awhile ago and then pinned it to one of my own boards (mmm, food ideas!), then promptly neglected to make them. However I love oatmeal and I love muffins so the idea of having portable oatmeal to grab and go in the morning was appealing.
The recipe can be found over here and it’s ridiculously easy – no fussiness which is good for me since I’m not a fussy kind of baker. I left out the walnuts because I’m not a fan and I used the suggested dried cranberries which I love.
An added bonus is that it’s super easy clean-up as well. I don’t always mind a big production for good food but there’s definitely something to be said for making something that allows you to wash everything up before it’s even halfway done baking.
I had one to eat once they had cooled enough and it was pretty tasty. The inside was spongier than I had expected but I guess that’s because there’s no flour, or maybe it’s from the lack of walnuts. It certainly wasn’t off-putting, just a slightly different texture than your average muffin.
Overall it really did taste just like a bowl of yummy oatmeal would, and I’ll make them again. Next time I might experiment and use a mix of the cranberries and some chocolate chips. Hopefully the kids will enjoy them as much as I did; if so they can take one each for a snack at recess and I’ll bring one to work to eat at my desk before my shift starts.
